How to prepare your own rakia?It`s not so hard as it sounds.You need 120 l barrel,fill 1/3 of the barrel with well ripped grape and press the grape.Add to the grape 15kg cane sugar and 60 l water.Close the barrel and stir every day for 2 weeks.Distillate the material and you`ll get you own grape rakia.

Great bulgarian recipe with rakia for pickled cucumbers appetizer.The recipe is very simple and easy.Use 3 litres jar for cucumbers.For the marinade use 500 ml vinegar,50 ml rakia,1 l water,300 gr salt,fennel and quince leafs.

Fill up the jar with cucumbers and leafs.For marinade mix the water,salt and vinegar and boil until the mixture starts rolling boil,then pour it in the jar when it`s still hot.When the jar is cold pour 50 ml rakia,shake well and cap the jar.Store in a cold place.This recipe is perfect appetizer for rakia.

What is a good glass of rakia without a good appetizer? The answer is a half pleasure!

One of the best appetizers in Bulgaria for rakia is dried spicy sausage called Lukanka.There are different types of lukanka,but I`ll present you one of the best kind.

What do you need for a good lukanka ?
1. 4kg beef meat
2. 4kg pig meat
3. 40 spoons salt
4. 20 grams black pepper
5. 1 spoon cumin
6. 500ml. sparkling water

Wash the 2 types of meat and then dried it.Chopped it well and mixed with spices.Add 500ml. sparkling water and leave the meat for 24 hours.After that add another 500ml. sparkling water and mixed well and leave it again for 24 hours.
Stuff the meat into beef intestines and pierce few times.Leave the lunkanka for 3 days in a cool dry place.After this 3 days you`ll need to press the lunkanka for 5 days with big and heavy rod.After that press the lukanka for 15 days under big wood plank and then hang it for 30 days to dried in a cool dry place.

Sliced and enjoy the true bulgarian spirit with lukanka and rakia.Nazdrave!(Cheers)

In this article I`ll present you different types of rakia.We made rakia usually from fruits and sometimes we add some extra flavours.
First and the major type of rakia is rakia from fruits.The fruits can be:
Grape,Plums,Pears,Apricots,Apples,Cherries,Peaches and even from Rose flowers.
In some Bulgarian parts the rakia makers add some extra flavours like anise,herbs,honey,walnuts,mint extract and sour cherries.It`s up to your flavour choice.

In Bulgaria we have different kinds of rakia drink.One of them is Anise rakia or in bulgarian language Anasonliika.This kind of rakia is double distilled and very hard alcohol content around 50 alcohol degrees.The main regions that produce this kind of rakia are Karlovo and Sopot.Anise rakia is prepared from classical marc (in bulgarian djibri) after first distillation add to the rakia aniseeds and the rakia and distile for second time.After this leave the anise rakia around 65 alcohol degrees and leave in a big open barrel for a mount.Anise rakia should mature min. for one year to become smooth and light to drink.

To produce this kind of rakia we need the following ingredients:
1. 40 l water
2. 40 kg sugar
3. 2 buckets acacia leafs and flowers
4. 3 bottles wine vinegar
5. 3 packs bread yeast soaked before in 2 liters warm water

Mix all the ingredients into a huge tank.Stir everyday for period of 3 weeks and then distilled.Separate the first and last rakia.
Enjoy the spirit of Bulgaria.
